Interim 2010: Baking and How it Works |

These recipes all make multiple loaves. With some, there is the also the possibility of doing simple variations on a recipe. For example, the dough for the white-bread loaves could be formed into buns or rolls if desired. With this in mind, each team will be limited to a "single" recipe, but with variations.
Some of these recipes may seem somewhat incomplete, but we should cover in class anything else you may need. Do not hesitate to ask if you have questions. Please look closely at the recipes before you come. I'm assigning oven times for each team and giving approximate start times. But it would be very easy for me to have overlooked something in reading over the recipes. Work backward and make sure the start times are accurate. The kitchen tends to be cold so you may want to plan on rise longer rise times. That is, if a recipe says one to one and a half hours rising, plan on one and a half hours. The oven times can not easily be changed. But if a loaf isn't quite ready, we can go ahead and bake it. It won't be ideal, but it should still be very good.
Please note, several of the recipes (marked "two day") will require you to start the day before. We'll met at 1:00 on the 11th to start these. Oven times start around 10:00 and go to about 3:00. We'll reconvene as a group at 4:00. Unless otherwise noted, recipes will be distributed.

We are just scratching the surface of the breads that are out there, but should should see many of the fundamentals with these recipes.
