Today we are looking ast some odds and ends. These recipes all have the common feature that we use chemical levening and all are very quickly made. Consequently, these have all found a place as breakfast foods. As always, please read the recipes closely before you come to class! Check with the team before you to make sure they are on schedule. All times are oven times. Plan to be here a half hour earlier to mix batters.

Use cinnamon raisin oatmeal scones and omit raisins, or,
use cream scones and add cinnamon or dust with cinnamon sugar

Use cream scones but omit currants and decrease sugar to around 1 Tbs., add walnuts and blue cheese

We are just scratching the surface, but you should see many of the fundamentals with these recipes.
