Interim 2010: Baking and How it Works |

With pies, we will be focusing on simple pastry crusts. While there are a variety of different recipes for pie crusts, we will stick to one basic recipe with a couple of exceptions. Some pies will require single crusts while others will require double crust. Also, some will require blind baking. The proportions we will use come from The Pie and Pastry Bible by Rose Levy Beranbaum but we will use a slightly different technique for combining ingredients per the description in class. Discussion of alternative crust techniques and recipes will be limited to the class. Unless otherwise directed, use the class crust recipe rather than the crust recipe given with the recipe. As always, please read the recipes closely before you come to class! Check with the team before you to make sure they are on schedule. Some pies will reqire stove top preparation.

We are just scratching the surface, but you should see many of the fundamentals with these recipes.
